Chilli Con Carne


  • 1lb minced beef

  • A frozen cube of chopped chicken livers (optional)

  • Large onion, chopped

  • 3-4 cloves of garlic

  • Red pepper, seeded and chopped

  • Tin of tomatoes

  • Tin of red kidney beans

  • Tin of cannellini beans

  • Salt & pepper

  • Beef stock cube

  • A good squirt of tomato puree

  • Worcestershire sauce (a splash)

  • Balsamic vinegar (another splash)

  • Chilli flakes to taste

  • 1 tsp ground coriander

  • 1 tsp cumin

  • 1/2 tsp cinnamon


  • Gently fry the onions in olive oil until soft. Add garlic and stir for a few minutes. Add the mince and liver (if using) and brown. Stir in all remaining ingredients and bring to the boil. Leave to simmer for at least an hour, using broth or water to prevent it from drying out. I usually serve with rice, but today we had salted greens cooked in garlic and butter with olive oil roasted potato wedges.
