Rhubarb & Apple Crumble with Ice Cream

Ingredients

  • Rhubarb & Apple Crumble
  • 8 sticks of rhubarb, chopped into 4cm pieces

  • 2 apples, peeled, cored and chopped

  • Large dessert spoon of honey

  • 1tbsp lemon juice

  • 100g cold butter, diced

  • 100g buckwheat flour

  • 100g ground almonds

  • 80g sugar

  • Ice Cream
  • 3 cups of double cream

  • 4 egg yolks

  • 1/3 cup of honey

  • 1 tbsp vanilla extract

Directions

  • Rhubarb & Apple Crumble
  • Stew ingredients in a pan until the fruit is soft.
  • Rub crumble ingredients together to resemble breadcrumbs and top the fruit filling
  • Bake in a hot oven for around 45 minutes until golden brown.
  • Ice Cream
  • Gently whisk all the ingredients together and pour into an ice cream maker and follow the manufacturer’s instructions.
