Baked Cheese and Bacon Pie

This is a firm favourite in our house and is based on a meal Chris’s mum used to make when he was younger. It also uses cheese and potatoes of which we’ve had plenty. It doesn’t take much preparation but does take a while to cook and you need to be sure the potatoes aren’t still a bit hard before you serve it.


  • 5 or 6 medium potatoes, washed and sliced about 5mm thick

  • 1 Onion sliced

  • Bacon (I used a 184g pack of unsmoked back bacon), chopped into bite size pieces

  • 150g cheese, grated

  • Ground black pepper


  • Layer the onion, bacon, potatoes and cheese in a proof dish. Top with cheese and sprinkle black pepper.
  • Bake in a hot oven (around 200C) for about an hour an a half (check after about an hour to see how close potatoes are.
  • Serve with veggies of your choice as a tasty lunch or brunch.
